Apricot Chicken

A favourite dish from my Mum's kitchen, nice served on rice with salad or vegies.

Ingredients

This is one of my mother's best and simplest recipes, presenting well for too, served on rice.

Instructions

  1. Mix french onion soup powder, apricot jam and thousand island dressing. Add water whilst whisking until a light sauce consistency is achieved.
  2. Place chicken in a baking dish and cover with sauce.
  3. Cover dish with aluminium foil and bake for 1 1/2 hours at 170 degrees C.
  4. Remove foil cover and bake for a further 30 minutes.
