Butterscotch Pudding

This is a Lois Gill (Ange's mum) special. Delicious butterscotch sauce topped with a light and fluffy beaten egg white.

  1. Mix flour and sugar, then add beaten egg yolk and milk gradually.
  2. Bring to boil and stir until mixture thickens, then pour into a pie dish.
  3. Beat egg whites, adding 1/2 cup white sugar gradually. Pile on top of butterscotch mixture.
  4. Bake in oven at 180 degrees C until brown.
