Butterscotch Pudding
This is a Lois Gill (Ange's mum) special. Delicious butterscotch sauce topped with a light and fluffy beaten egg white.
Ingredients
- 1 cup brown sugar
- 2 eggs
- 2 cups milk
- 2 tbsp plain flour
- 2 tbsp butter
- 1/2 cup white sugar
Instructions
- Mix flour and sugar, then add beaten egg yolk and milk gradually.
- Bring to boil and stir until mixture thickens, then pour into a pie dish.
- Beat egg whites, adding 1/2 cup white sugar gradually. Pile on top of butterscotch mixture.
- Bake in oven at 180 degrees C until brown.
