Chocolate Hedgehog Slice
This is my grandmother's recipe - for years she ran a store selling cakes, biscuits, slices and pastries. It is absolutely delicious!!
Ingredients
- 8 ounces butter
- 8 ounces white sugar
- 2 egg
- 4 tbsp cocoa
- 2 tsp vanilla essence
- 16 ounces crushed plain biscuits (a bit less than 2 packets of Marie biscuits)
Instructions
- Melt the butter over a gentle heat, adding the sugar, vanilla essence and cocoa until a smooth mixture.
- After the butter mixture has cooled a few minutes, add the beaten egg.
- Crush the biscuits using a rolling pin, leaving some larger pieces. It is good to do this on top of a sheet of newspaper to make moving the crushed biscuits easier and avoid making a mess.
- Press into an 11 x 7 inch biscuit tray, sprinkling and pressing desiccated coconut onto the top.
- Place in a refrigerator to set.
