Crusty Lamb Cutlets

I learnt this recipe during my cooking classes at high school - the curry and mayonnaise breadcrumbing, topped with cheese, complements the flavour of lamb beautifully.

  1. Trim excess fat from cutlets.
  2. Brush cutlets with combined mayonnaise and curry powder.
  3. Press cutlets into combined breadcrumbs and sesame seeds.
  4. Place in a single layer in a baking dish. Bake at 190 degrees C for 25 minutes.
  5. Turn cutlets, top with cheese and bake for a further 10 minutes.
