Morrocan Beef
A favourite of mine - the combination of tomato, spinach, cumin, turmeric and sultanas with lamb or beef provides a welcome break other dishes. It's quick to cook and a good way to eat spinach if you don't like the flavour of spinach but need some iron!
Ingredients
- 500gm beef (or lamb) strips
- 1 tspn oil
- 1 clove crushed garlic
- 1 chopped onion
- 1/2 cup slivered almonds
- 1/2 cup sultanas
- 400gm can chopped tomatoes
- 125gm chopped spinach
- 1 tspn ground turmeric
- 1 tspn ground cumin
- 1 tbsp white sugar
- cous cous (or rice)
Instructions
- Brown beef in oil and garlic in a hot pan, add onion until softens.
- Add sultanas and almonds, cook for 1 minute
- Add chopped tomatoes, spinach, turmeric, cumin and sugar, and cook for another 3 minutes.
- Serve with cous cous (or rice, but cous cous seems to taste better)
